Subject outline
This subject focuses on key aspects of the annual cycle of vineyard operations. Students will explore physiological and environmental aspects relevant to yield and quality of grapes and wine. Vine physiology, nutrition and health will be considered along with the impact of climate and weather events, soil types, light, water and crop load on the harvest. Issues in vineyard management, yield and quality will be investigated and areas explored such as: selection of planting material including varieties, clones and rootstocks; pest and disease monitoring and control; pruning, training and trellising; canopy management; irrigation; soil and vineyard floor management; monitoring and use of fertilizers; frost and wind mitigation; timing and management of harvest and pest, disease and weed control including integrated pest management and quarantine.

Special conditions This elective will run subject to sufficient enrolments. There is an optional 3 day field trip in this subject during the mid-semester break. The cost of accommodation will be borne by the students. Attendance at the field trip will have no impact on assessment.

01. Identify and analyse the annual production management cycle of a vineyard

02. Identify and manage the factors that have an impact on yield and quality of grapes and wine with emphasis on premium grape production

03. Evaluate the effects of environmental factors on grape and wine quality
- Activities:
- Case study analysis with field trips and workshops will be used to explore the effect of environment on grape and wine quality. Student will use the Institute's vineyard for some sessions.
04. Investigate methods of avoiding or responding to adverse weather conditions
- Activities:
- Case study analysis with field trips and workshops will be used to explore the management of adverse weather conditions on a vineyard. Student will use the Institute's vineyard for some sessions.
05. Describe and explain the HACCP principles and their application in the modern vineyard and demonstrate an awareness of the ethical and environmental issues applicable to vineyard management
- Activities:
- Case study analysis with field trips and workshops will be used to explore quality processes of a vineyard. Student will use the Institute's vineyard for some sessions. Group discussion of ethical and environmental issues will be considered.
