Subject outline

This subject focuses on developing knowledge of the principal concepts of winery engineering practices in commercial wineries and the safe operation of facilities, plant and equipment. Students will analyse and evaluate new information, concepts and techniques relating to wine engineering and investigate the management of engineering problems in the winery. Students will be able to explain the relationship between physical laws, function design and operating characteristics of winery plant and equipment. Students will also apply knowledge of winery engineering to issues of environmental sustainability in the winery. Independent research by students is a feature of the course.

01. Analyse and evaluate new information, concepts and techniques relating to winery engineering

Activities:
Workshop sessions, practical exercises and workshops in the winery will be used to demonstrate new information and concepts in winery engineering techniques

02. Apply practical and flexible problem solving skills to a range of winery engineering problems

Activities:
Workshop sessions, practical exercises and workshops in the winery will be used to winery engineering issues and problems. Groups of student will discuss possible solutions.

03. Explain and apply knowledge of winery engineering in relation to environmental sustainability

Activities:
Workshop sessions and demonstrations will inform students to the dangers inherent in winery activities. Use of job safety analysis sheets or equivalent will be used to assess the risks the personnel and the environment. Group discussions will also include ethical issues and environmental sustainability.

04. Explain the relationship between physical laws, function design and operating characteristics of winery plant and equipment.

Activities:
Using workshop sessions and practical exercises in the laboratory and winery, students gain knowledge on the behaviour of fluids and the construction, operation and maintenance of facilities.
